46.1 Food history is an evidence problem before it is a cuisine story
A history of food in Mithila, Vajji and Anga cannot begin by copying a modern recipe list backward into
antiquity. Food is unusually vulnerable to historical distortion because cooked dishes disappear almost
completely, while modern regional cuisines are vivid and familiar. The reliable sequence is the reverse: begin
with charred plant remains, animal bones, fish and shell, grinding stones, hearths, ovens and vessels; then add
dated texts, inscriptions and institutional records; only after that use later ethnography to test possible
continuities. This chapter therefore distinguishes ingredients from dishes, production from consumption,
and memory from dated evidence. A grain recovered from an archaeological layer proves cultivation or use
more securely than it proves a named recipe; a medieval food-name proves vocabulary and social practice
more securely than it proves an unchanged dish across centuries.
46.2 The alluvial ecology behind the regional food system
The food history of the region was shaped by an alluvial landscape of monsoon rainfall, rivers, flood
basins, ponds, wetlands and fertile but mobile soils. Such an environment favoured rice but never supported
rice alone. Winter cultivation, pulses, oilseeds, livestock, fish, molluscs, fruits and collected plants broadened
the subsistence base and reduced dependence on a single harvest. Floods could replenish soils and aquatic
resources, yet they could also destroy standing crops, grain stores and transport routes. Food security
therefore depended on seasonal diversity, storage, social exchange and access to different ecological niches.
The contrast between north Bihar's flood-prone plains, the Ganga corridor and the eastern Anga zone helps
explain why household diets combined field agriculture with riverine and wetland resources rather than
forming a narrowly cereal economy.
46.3 Chirand as a regional comparator, not a substitute for Mithila
Chirand lies in north Bihar on the Ganga and is one of the richest regional archaeological comparators for
prehistoric food history, but it must not be treated as if it were a direct excavation of every part of Mithila,
Vajji or Anga. Its Neolithic deposits nevertheless demonstrate the range of resources available in the broader
middle-Ganga environment. Archaeological and zoological studies report rice, wheat, barley, pulses and field
pea, together with domesticated cattle, buffalo, sheep, goat and pig and a wide spectrum of wild and aquatic
fauna. Fish, turtle and molluscan remains matter especially because they show that wetlands and rivers were
active food-producing zones. Chirand therefore supplies a model of mixed subsistence against which
evidence from sites within the book's core regions can be compared, with geographical distance always stated
rather than concealed.
46.4 Rice: central crop, contested beginnings
Rice is indispensable to the food history of the middle Ganga plain, yet its earliest chronology remains
debated. Archaeobotanical research has recovered early rice from several Ganga-plain sites, but scholars
continue to distinguish between wild collection, cultivation and fully domesticated rice. The debate is
important methodologically: the presence of rice grains or phytoliths is not automatically equivalent to
settled paddy agriculture, and very early dates require secure stratigraphy and morphological evidence. By the
later Neolithic, Chalcolithic and early historic phases, however, the importance of rice within the regional
crop system is much more secure. For Mithila, Vajji and Anga, the safest historical conclusion is therefore not

that a single timeless rice cuisine existed from the first appearance of rice, but that wet-rice cultivation
became one of the durable agricultural foundations from which many later food traditions could develop.

46.5 Crop diversification and the two-season advantage
Archaeobotanical work across the Ganga plain shows that rice coexisted with barley, wheat, millets,
pulses and oil-bearing crops. The significance is not merely dietary variety. A combination of monsoon and
winter crops spreads labour and risk across the year and links food history directly to agricultural scheduling.
At sites such as Chirand and Senuwar, rice was complemented by winter cereals and pulses; broader Ganga-
plain datasets add mung bean, field pea, lentil and several millets. This diversification complicates any picture
of an exclusively rice-eating population. It also suggests differentiated preparations: whole grains, ground
flour, boiled pulses, parched cereals and mixed dishes would have demanded different processing tools and
fuel regimes, even where the exact recipes are archaeologically unrecoverable.
46.6 Pulses, oilseeds and the hidden architecture of everyday meals
Pulses and oilseeds are less visually spectacular than monuments, but they are central to nutritional and
economic history. Archaeobotanical assemblages from the Ganga plain include mung, lentil, peas, sesame
and mustard among other taxa. Pulses complement cereal diets with protein; oilseeds provide cooking fat,
condiments and marketable produce. Their presence also changes how we imagine rural labour because
threshing, drying, storage and grinding varied by crop. Later regional food systems make extensive use of
pulses and mustard oil, but the historical argument must move in stages: archaeological occurrence
demonstrates ancient or early use of ingredients, while continuity of particular preparations must be shown
through dated textual or ethnographic evidence rather than assumed from present practice.
46.7 Fish, rivers and wetlands as food-producing landscapes
Fish is often treated as a cultural preference, but archaeology first reveals it as an ecological opportunity.
Chirand has yielded fish remains, and the riverine geography of the Ganga plain created repeated access to

fish, turtles, molluscs and other aquatic resources. Such foods could be caught seasonally, consumed locally,
dried or otherwise preserved, although preservation methods are difficult to reconstruct without direct
evidence. The importance of aquatic resources would have varied by household, religious discipline, social
status and proximity to water. The evidence therefore supports a long history of fishing and aquatic
consumption in the wider region without licensing the claim that every community, caste or religious
institution shared the same diet.
46.8 Cattle, buffalo, sheep, goat and pig: animals beyond a simple meat/no-meat
binary
Faunal remains from regional sites show domesticated cattle, buffalo, sheep, goat and pig alongside wild
species. Bones can demonstrate the presence and sometimes the butchery of animals, but animal economies
were multifunctional. Cattle and buffalo supplied traction, manure and milk as well as potential meat; sheep
and goats supplied milk, hair or fibre as well as flesh; pigs had a different economic niche. Religious and
normative traditions increasingly shaped what kinds of animal consumption were valorised, restricted or
condemned, but archaeological deposits remind us that practice was neither uniform nor reducible to later
vegetarian/non-vegetarian identities. A social history must therefore ask who controlled animals, which
products were extracted during an animal's lifetime, and under what circumstances slaughter occurred.
46.9 Wild animals, hunting and the shrinking visibility of foraging
Neolithic and Chalcolithic assemblages in Bihar include deer and other wild animals in addition to
domestic stock. Hunting and gathering did not vanish at the moment agriculture appeared. Wild meat,
fruits, greens and wetland foods could supplement cultivated staples, especially in seasons of shortage or
among communities with specialised ecological knowledge. Over time, expanding cultivation, settlement,
political control over forests and changing ritual norms could alter access to wild resources. Because later elite
texts often privilege cultivated food and courtly or ritual cuisines, archaeological faunal evidence is especially
important for recovering the older mixed economies that textual sources may understate.
46.10 Hearths, ovens, querns and pottery: reconstructing cooking without
recipes
Cooking technologies preserve a different history from ingredients. Hearths and ovens demonstrate
controlled heat; querns, mullers and grinding stones reveal the transformation of cereals and pulses; pottery
shapes suggest boiling, storage, serving and transport. At Chirand, reports of hearths and ovens have
encouraged interpretations of roasting and communal feeding, though such functional readings should
remain tied to context rather than treated as certain recipes. Ceramic form, soot and residue can narrow
possibilities, but a pot is not a named dish. The strongest reconstruction therefore moves from action to
cuisine cautiously: pounding, grinding, boiling, roasting, frying and fermentation are technical processes
whose combination into specific regional foods requires additional evidence.

46.11 Early historic towns and the problem of feeding non-farmers
The growth of Vaishali and other early historic centres changed food history by separating many
consumers from direct cultivation. Officials, artisans, merchants, monks, travellers and urban households
depended on grain moving from rural producers into markets, institutions and domestic stores. Urbanisation
therefore increased the importance of transport, measurement, storage and exchange. Archaeology can
document settlement size, storage-related vessels and market connectivity more readily than daily menus, but
the economic implication is clear: feeding towns required recurring surplus and distribution networks. Food
became a commodity as well as a subsistence good.
46.12 Vaishali: market, hospitality and institutional consumption
Vaishali's importance in Buddhist and Jain traditions makes it one of the best places to observe how food
crossed household, market and religious boundaries. Narrative sources repeatedly present donors providing
meals, groves or hospitality to religious communities, while archaeology confirms a substantial settlement
and long occupation. These narratives should not be mined as literal menus, yet they demonstrate that
cooked food, alms and hospitality carried social and religious meaning. A meal could convert agricultural
surplus into merit, prestige and alliance. The city therefore belongs in food history not because one can
reconstruct a single “Vaishali cuisine,” but because it reveals the institutional circulation of food among
householders, merchants, elites and renunciants.
46.13 Buddhist alms and the difference between monastic rules and regional
cuisine
Buddhist monastic literature regulates the receipt, timing and acceptability of food, but such rules
describe institutional discipline rather than the complete cuisine of Vajji or Anga. Monks depended on lay
producers and donors, so the alms economy connected religious institutions to local agriculture and markets.
Rules concerning meal times, stored food or prohibited forms of acquisition illuminate the social

organisation of eating more securely than they identify a regional recipe. At large monasteries such as
Vikramshila in the Anga zone, collective feeding must have required substantial provisioning, but the
excavated architecture does not by itself reveal a detailed menu. The historical point is scale, dependence and
redistribution, not culinary invention.
46.14 Jain discipline and food as an ethical problem
Jain traditions associated with Vaishali and the wider region place exceptional emphasis on non-violence,
restraint and the ethical consequences of taking life. These disciplines affected which foods could be
accepted, how food was obtained and the moral status of eating. Yet monastic prescriptions should not be
projected onto all lay households or treated as a census of local practice. Their value for food history lies in
showing that diet had become an explicit field of ethical reflection: choices about plants, animals, preparation
and timing could express religious identity. The coexistence of such disciplines with archaeological evidence
for diverse animal use also illustrates why normative and material sources must remain analytically distinct.
46.15 Milk, curd and ghee: products of a mixed agro-pastoral economy
Cattle and buffalo economies make dairy historically plausible long before particular regional
combinations appear in texts. Milk can be consumed fresh or transformed into curd, butter and ghee,
extending shelf life and concentrating value. Dairying also links food to gendered and household labour,
animal ownership and market exchange. By the early fourteenth century, Jyotirisvara's Varna-ratnakara gives
much firmer regional evidence for curd and cream in feast description. This is the point at which a historian
can move from the general economic possibility of dairying to specific medieval Mithila food vocabulary.
46.16 Sugar, jaggery and sweetness
Sweetness in historical diets came from several sources, including fruits and processed sugarcane.
Sugarcane has a long history in northern and eastern India, but the scale and technology of processing varied.
Boiling cane juice into jaggery, producing more refined sugar, and using sweeteners in ceremonial foods
required fuel, vessels and specialised labour. Medieval feast vocabulary and later market records show that
sweets became socially important, but the survival of a modern sweet cannot establish its medieval form. The
safer historical method is to trace sweetening agents, processing technologies and named preparations
separately.
46.17 Fruit, gardens and seasonal abundance
The alluvial plains supported orchards and garden produce as well as field crops. Mango, jujube and other
fruits occur in textual, archaeobotanical or later historical evidence, while Buddhist narratives famously make
groves in the Vaishali region part of landscapes of donation and hospitality. Fruit could be eaten fresh, dried,
pickled or transformed, though exact techniques must be dated separately. Gardens were also status-bearing
spaces: access to cultivated fruit linked food to landholding, urban leisure and religious patronage.
46.18 Salt, spices and the geography of things not grown locally
Food history also includes ingredients that had to travel. Inland north Bihar did not produce every salt,
spice or aromatic substance consumed there. Trade therefore entered the kitchen through small but high-
impact commodities whose weight was modest relative to value. Jyotirisvara's discussion of betel, areca and
aromatics in medieval Mithila illustrates this wider circulation. The presence of non-local flavouring agents

reveals market integration, but historians should distinguish a named imported ingredient from evidence that
it was common in every household.

46.19 Flattened and parched rice: when a grain becomes a named food
The Varna-ratnakara is particularly important because it moves the evidence from generic rice cultivation
to named forms of processed rice. Jyotirisvara mentions chura or flattened/parched rice and farhi or
fried/parched rice among a wider culinary vocabulary. Such foods are technically significant because
processing changes portability, shelf life, texture and the amount of cooking required at the point of
consumption. They are also socially significant because processed grain can serve travellers, guests and feast
settings differently from freshly boiled rice. This is firmer evidence for medieval Mithila food history than
any attempt to infer an identical dish directly from prehistoric rice remains.
46.20 Chura with curd: a medieval textual anchor and a continuity question
One of the most striking passages associated with Jyotirisvara describes fine chura served with abundant
curd and cream. The combination is recognisable in later Mithila food culture, making it tempting to speak
of unbroken continuity. The safer conclusion is more precise: the text anchors a rice-and-curd combination
in early-fourteenth-century Mithila, while later evidence documents its persistence and elaboration.
Continuity across the centuries is plausible where intervening evidence exists, but the medieval text should
not be stretched backward into early historic Vajji or prehistoric north Bihar without proof.
46.21 Feast lists as social documents
Jyotirisvara's culinary lists include multiple prepared foods and sweets rather than a single subsistence
meal. A feast list is therefore evidence of classification, abundance and social display. It may exaggerate variety
for literary effect, but that very excess is historically informative: elite and ceremonial eating valued
multiplicity, sequencing and the ability to mobilise specialised ingredients. Feast descriptions also illuminate
servants, cooks, vessels, hospitality and status. They should not be treated as statistically representative of

peasant diets, yet they show what a medieval author expected readers or listeners to recognise as desirable
food.
46.22 Betel after the meal: consumption beyond nutrition
Betel leaf, areca nut, lime and aromatics belong to food history even though they are not staple
nourishment. Varna-ratnakara devotes attention to betel and its qualities, and references to paan as mouth-
freshening or social consumption show how eating extended into etiquette, hospitality and bodily
presentation. Because areca and some aromatics were traded over distance, the betel complex also connected
Mithila to wider commercial circuits. Its social role reminds us that cuisine is not only calories: taste,
fragrance, sociability and gift exchange are historical practices.
46.23 Food labour: growing is only the first stage
Every meal required invisible work after harvest: threshing, husking, pounding, grinding, winnowing,
washing, churning, cutting, fermenting, cooking and cleaning. Much of this labour was organised within
households and was frequently gendered, though the exact division varied by class, community and period.
Large households, courts, monasteries and feast settings could employ specialised cooks and servants. Food
history therefore belongs to labour history. The technologies of hand-pounding rice, grinding grain or
churning curd determine daily time expenditure as surely as the crops themselves determine calories.
46.24 Storage, scarcity and the politics of the granary
Surplus mattered only if it could survive. Grain storage protected households against the gap between
harvests, supported seed retention and allowed rulers, landlords, temples or monasteries to command
reserves. Storage vessels, pits and granary-like facilities are therefore part of food history even when no meal
remains. In flood-prone Mithila, storage location and protection from moisture were especially important.
Control over stored grain could also create hierarchy: households with reserves were better able to survive
crop failure, lend grain, feed dependants or sell into high-price markets.
46.25 Flood, drought and seasonal hunger
The same rivers that sustained rice, fish and transport could destroy fields and homes. Food history must
therefore include bad years, not only feast descriptions. Flood, channel migration, drought, crop disease and
political disruption could reduce harvests or interrupt markets. Households responded through crop
diversity, stored grain, fishing, gathered foods, livestock sales, borrowing, migration and patronage networks.
These strategies are difficult to recover evenly before the colonial period, but the ecological logic is durable
and should frame interpretation of the region's agrarian resilience.
46.26 Anga, Champa and Vikramshila: provisioning an eastern corridor
Anga's position along the Ganga and routes toward Bengal made food supply part of a wider exchange
economy. Urban Champa and, later, the great monastic establishment at Vikramshila required flows of grain,
fuel, dairy, vegetables and other provisions from surrounding producers. Archaeology at Vikramshila
demonstrates the scale of the residential institution, but not a secure item-by-item menu. The correct
historical inference is therefore institutional demand: hundreds of resident or visiting consumers would have
tied the monastery to villages, markets, donations and transport networks in the Bhagalpur-Anga zone.

46.27 Vegetarian and non-vegetarian histories cannot be reduced to a single
regional rule
The sources document both plant-rich agricultural systems and the exploitation of animals and aquatic
resources. Religious prescriptions, caste practices, household wealth, occupation and ecology created
different food regimes. It is therefore misleading to describe ancient or medieval Mithila, Vajji and Anga as
uniformly vegetarian or uniformly meat-eating. Archaeology records what some people consumed or
deposited; normative texts record what authors prescribed; literary texts record what was imaginable or
prestigious. Their overlap is historically meaningful, but none of them alone represents the entire population.
46.28 Regional cuisine identities are historical formations
Modern labels such as Maithil cuisine or Angika cuisine organise living repertoires of dishes, festival foods
and tastes. They are important evidence for modern identity, but they should not be treated as fixed
containers extending unchanged into antiquity. Some ingredients and techniques have deep histories; some
named preparations are textually anchored in the medieval period; others may be early modern or modern
innovations. Food identity is therefore layered. The historian's task is to date each layer wherever possible
rather than choose between the equally misleading claims that everything is ancient or everything is recent.

46.29 Method: from ingredient to dish, and from dish to identity
A rigorous food history proceeds through several distinct questions. First, what plants and animals were
available and used? Second, what processing and cooking techniques are materially visible? Third, when do
texts begin to name particular foods or combinations? Fourth, how were meals distributed through
households, markets, monasteries, courts and ritual events? Fifth, when do later communities begin to
describe these practices as markers of a regional cuisine? Keeping these questions separate prevents both
archaeological minimalism and culinary romanticism. It also allows genuine continuities—such as the
medieval textual anchoring of chura and curd—to stand out more clearly because they are not buried
beneath unsupported claims.

46.30 Conclusion: food as an archive of ecology, labour and memory
The food history of Mithila, Vajji and Anga is a history of adaptation to an alluvial world. Rice became
central without eliminating winter cereals, pulses, oilseeds, fish, livestock, fruits and gathered resources.
Towns and monasteries transformed surplus into markets, alms and institutional provisioning. Medieval
Mithila's Varna-ratnakara provides a rare lexical window into processed rice, curd, cream, sweets, betel and
feast culture, allowing some culinary practices to be dated with unusual confidence. Yet the strongest
conclusion is methodological as much as culinary: modern cuisine preserves real historical memory, but that
memory must be tested against dated evidence. When archaeology, text and later practice converge, the
region's food traditions become not a timeless menu but a layered record of ecology, labour, exchange, ritual
and identity.
